Soups are perfect for this strange time of year, when it can be 60 degrees one day and snowing the next. (Or is that just Minnesota?) These quick and easy soups are super quick because each uses five ingredients or less. My personal favorite is Tomato Tortellini Soup. Make it using chunky tomato soup instead of cream of tomato soup for even more texture and flavor. Serve any soup with an easy savory bread for a complete meal.

This is the menu that will be served all over the country on St. Patrick's Day tomorrow. By the way, did you know that Corned Beef and Cabbage is not a classic celebratory dish in Ireland? It's considered too common. But for some reason we consider it the most 'Irish' of American dishes. Enjoy it with a couple of types of mustard (Dijon and grainy mustard are my favorites) and be sure to drink some good Irish beer.

This menu pairs classic Corned Beef with a few more untraditional choices. Since Corned Beef is so rich, I like to serve it with something crisp and cool. Cole Slaw is the perfect choice, and you can use it again to make Corned Beef and Slaw Sandwiches in a couple of days. Irish Soda Bread made into biscuits instead rounds out the meal nicely, and carrots glazed in the slow cooker add color and texture. For dessert, a simple pie is perfect.

St. Patrick's Day is fast approaching. I've been making lots of corned beef recipes. I was delighted to find natural corned beef at my co-op and have been enjoying its rich taste. These quick and easy recipes are all perfect to make for St. Patrick's Day or are a wonderful way to use up leftovers. I especially like Corned Beef Shepherd's Pie, which we ate tonight.

In fact, make a couple fillings with your collection of crockpots and have a party! Yum.

Butter Chicken is kind of a misnomer. I think of chicken cooked in butter when I hear the name. Instead, this mildly spicy and rich dish produces chicken with a buttery texture. The chicken is cooked in a tomato sauce flavored with onion, garlic, ginger, and curry powder. Make the dish as mild or spicy as you like. I have seen recipes that add cardamom, paprika, turmeric, chili powder, and cinnamon. But I like to use a really good curry powder because that combines all of these flavors into one addition. Serve it with a green salad made with avocados for a cooling contrast, and some simple brown rice.

Crockpot Corned Beef and Cabbage is a super easy recipe that lets you cook tender corned beef in the slowcooker. The cabbage is added at the end of cooking time so it stays slightly crisp. And for a twist on the classic St. Patrick's Day recipes, Corned Beef and Cabbage Tarts are fabulous. These delicious individual little tarts combine red cabbage and cubed corned beef with Gruyere cheese in tender and flaky pastry for a great treat.
