Red wine with meat, white wine with fish. Just how long has that mantra been drummed into our consciousness? On the surface it makes sense: An aged cabernet sauvignon works seamlessly with a nice charred filet mignon while a buttery chardonnay can gloss the plushness of picked-out lobster.
