Q : A few weeks ago I was at a fabulous restaurant in Montreal. I ordered a 2002 from the Nuits Saint Georges region of France. The waiter decanted the bottle by inverting it into the decanter and swirling it to speed up the bottle emptying. My grandfather had shown me this trick long ago to empty bottles quickly (it really works). The waiter said this helps the wine breathe. …
